SPECIAL NOTES
The 2021 season was hot and shorter than expected. Fruit came in early. Started receiving fruit mid-September. Dry conditions at harvest. Fruit came in clean, with no botrytis. Very mature with small amounts of berry shrivel.
A large amount of the fruit used for this wine came from two blocks that we had trellised as archcanes. These are also younger vines from block 12/14. The goal here was to push the vines to work harder and increase yields. The impact on the profile of the wine has shown higher fruit esters.
FERMENTATION
Production style: Cold Soak – 24 Hours. Macro-Bin Fermentation. Inoculated with yeast, punch downs twice daily through entire fermentation. Pressed to tank post-fermentation. Barrel MLB inoculation. Barrel aged 22 months on ___New French Oak. Some Clones are kept separate from the field all the way through to barrel aging. Blended together after trials before bottling.
