Vintage Notes:
2023 in Southern Oregon started out colder than normal, with abundant mountain snowpack and a chilly spring, before transitioning into a hot summer, fall and early winter. Harvest came early for Sauvignon Blanc as it approached almost 22 brix in mid September. The fruit was perfectly juicy and showed traditional Sancerre style characteristics. Fruit was machine harvested at Schmidt Vineyards and pressed to juice stage then transferred to the Coria facility the following day. We then quickly began fermentation and production on the wine.

Winemaker Notes:
This aromatic white wine went through a 12 day cool fermentation process after inoculation of Yeast QA23. Once this wine reached -2 brix we began cooling with a Cold Fin and cooling Glycol submerged into the 500 gallon Poly tank. It sat on its gross lees for one month, we racked and then bottled March 2024. Only addition done post fermentation was SO2.
